  • 2 cans (15 oz / 425 g each) Great Northern Beans, drained and rinsed
  • 6 slices bacon, chopped (preferably thick-cut)
  • ½ cup (100 g) brown sugar, packed
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup (120 ml) ketchup
  • 1 tablespoon (15 ml) Dijon mustard
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1 teaspoon (5 ml) Worcestershire sauce
  • Black pepper, freshly ground, to taste
  • Salt, to taste

Instructions

  1. Chop the bacon into small pieces, finely dice the onion, and mince the garlic. Drain and rinse the beans.
  2. In a skillet over medium heat, cook the bacon until crispy but not burnt. Transfer bacon to a paper towel-lined plate, leaving the fat in the pan.
  3. Using the bacon fat, sauté the chopped onion until translucent and soft, about 3-4 minutes. Add garlic in the last minute to avoid burning.
  4. Add cooked bacon, sautéed onion and garlic, rinsed beans, brown sugar, ketchup, mustard, apple cider vinegar, Worcestershire sauce, and black pepper to the crockpot. Stir well to combine.
  5. Cook on low for 6 to 8 hours, keeping the lid on to retain moisture and flavor.
  6. About 30 minutes before serving, taste and add salt or additional pepper as needed. If sauce is too thick, stir in a splash of water or broth. Optionally, stir in a pat of butter for extra richness.
  7. Serve warm, straight from the crockpot.
