Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or prepare a wire rack over a baking sheet.
  2. Wearing gloves if sensitive, slice each jalapeño in half lengthwise. Use a small spoon to scoop out all seeds and membranes to control heat.
  3. In a medium bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until smooth and fully blended. Add a teaspoon of milk if mixture is too stiff.
  4. Fill each jalapeño half generously with the cream cheese mixture using a small spoon or piping bag. Avoid overfilling.
  5. Wrap one strip of bacon around each stuffed jalapeño half, starting at the narrow end and spiraling toward the wide end. Secure with a toothpick if needed.
  6. Place each wrapped popper cut side up on the prepared baking sheet or wire rack, leaving space between them.
  7. Bake for 20-25 minutes, checking after 15 minutes to prevent burning. Bacon should be crispy and browned, filling bubbly.
