Crispy Deviled Eggs with Bacon and Chive Topping

A quick and easy appetizer featuring classic deviled eggs with a crispy pan-fried edge, topped with smoky bacon and fresh chives for a perfect party snack.

Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and freshly ground black pepper to taste
  • 3 slices bacon, cooked crisp and crumbled
  • 2 tablespoons fresh chives, finely chopped
  • Smoked paprika (optional, for garnish)
  • 1 teaspoon oil or butter for frying

Instructions

  1. Place 6 large eggs in a medium saucepan and cover with cold water by about an inch. Bring to a rolling boil over medium-high heat (about 10 minutes). Turn off heat and cover the pot. Let eggs sit for 12 minutes.
  2. Transfer eggs immediately to a bowl of ice water to cool for at least 5 minutes. Tap each egg gently on a hard surface and peel under running water.
  3. Slice each egg in half lengthwise and carefully scoop out yolks into a mixing bowl. Mash yolks with a fork until smooth.
  4. Add 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon white vinegar, salt, and pepper to the mashed yolks. Stir until creamy and well combined. Adjust seasoning if needed.
  5. Fry 3 bacon strips in a skillet over medium heat until crispy. Drain on paper towels, then crumble finely and set aside.
  6. Spoon or pipe the yolk mixture back into the egg white halves, mounding slightly.
  7. Heat a small non-stick skillet over medium heat with a teaspoon of oil or butter. Add deviled egg halves yolk-side down carefully. Cook for 2-3 minutes until edges turn golden and crispy. Watch closely to avoid burning.
  8. Remove from skillet and arrange on a serving platter. Sprinkle with crumbled bacon and finely chopped fresh chives. Add a pinch of smoked paprika if using.

Notes

Use eggs that are a few days old for easier peeling. Do not overcrowd the pan when crisping eggs to ensure even golden edges. Use medium heat to avoid burning. Bacon can be substituted with turkey bacon or smoked tempeh. For a vegetarian option, omit bacon and add smoked paprika or crispy fried shallots.
