  • 6 slices thick-cut bacon, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large eggs, beaten
  • 1/2 cup heavy cream
  • Optional: 2 tablespoons chopped dill pickles
  • Optional: 1/4 cup diced tomatoes or cherry tomatoes halved
  • Optional: Fresh chopped parsley or chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish with butter or nonstick spray.
  2. Cook the diced bacon in a skillet over medium heat until crispy and golden, about 8-10 minutes. Transfer bacon to a paper towel-lined plate, leaving the rendered fat in the skillet.
  3. In the same skillet with bacon fat, sauté the chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Add ground beef to the skillet with onions and garlic. Break it up and cook until no longer pink, about 6-8 minutes. Season with smoked paprika, salt, and pepper. Drain excess fat if needed.
  5. Stir the crispy bacon pieces back into the beef mixture.
  6. In a medium bowl, whisk together beaten eggs, heavy cream, half of the shredded cheddar, and half of the mozzarella until smooth.
  7. Layer the casserole by spooning half the beef and bacon mixture into the bottom of the baking dish. Pour half the cheesy custard evenly over the meat. Repeat with the remaining beef mixture and top with the rest of the cheese custard. Sprinkle any leftover cheddar and mozzarella on top.
  8. Bake for 30-35 minutes until the top is golden, bubbly, and the casserole is set (a knife inserted near the center should come out clean).
  9. Allow the casserole to rest for 5-10 minutes before slicing to help it firm up.
  10. Optional: Garnish with chopped dill pickles, diced tomatoes, and fresh herbs before serving.

Notes

If the top browns too quickly, tent the casserole loosely with foil halfway through baking. Drain excess beef fat to avoid sogginess. Let the casserole rest before slicing for clean pieces. For dairy-free, substitute heavy cream with full-fat coconut milk and use dairy-free cheese alternatives. You can add vegetables like mushrooms, bell peppers, or spinach for extra nutrition. The casserole can be made ahead and refrigerated before baking or frozen for up to 3 months.
