A quick and easy grilled cheese sandwich featuring a crispy golden crust and gooey melted mozzarella, perfect for cozy dinners or snack attacks.

  • 2 slices sturdy white or sourdough bread (San Francisco sourdough preferred)
  • 4 ounces shredded low-moisture mozzarella cheese
  • 2 tablespoons unsalted softened butter
  • 1 teaspoon olive oil (optional)
  • 1/4 teaspoon garlic powder
  • Pinch of freshly ground black pepper
  • Optional add-ins: thin slices of tomato, fresh basil leaves, red pepper flakes

Instructions

  1. Spread 1 tablespoon of softened butter evenly on one side of each bread slice. Optionally, brush the buttered side with 1 teaspoon olive oil. Sprinkle garlic powder and black pepper on the buttered sides.
  2. Place one bread slice butter-side-down on a plate. Pile shredded mozzarella evenly on top (about 4 ounces). Add optional tomato slices or basil if desired. Top with the second bread slice, butter-side-up.
  3. Heat a non-stick skillet or cast iron pan over medium-low heat for about 2 minutes.
  4. Carefully transfer the sandwich to the pan. Press down gently with a spatula. Cook for 4–5 minutes until the bread is golden brown and crisp.
  5. Flip the sandwich carefully using a spatula. Cook the other side for 3–4 minutes until golden and cheese is melted and gooey.
  6. Remove the sandwich from the pan and let it rest for 1–2 minutes before slicing.

Notes

Cook on medium-low heat to allow cheese to melt without burning bread. Shred mozzarella for better melting and stretch. Butter the bread slices directly instead of the pan to avoid greasy crust. Cover pan loosely if cheese melts slowly, but remove lid to keep bread crisp. Let sandwich rest before slicing to prevent cheese from spilling.
