  • 3 medium ripe bananas, mashed
  • 1 ½ cups (180 grams) all-purpose flour
  • ¾ cup (150 grams) granulated white sugar
  • ½ cup (115 grams) unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • Optional: ¼ teaspoon salt
  • Optional: vanilla extract or cinnamon (for variation)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan lightly with butter or non-stick spray.
  2. In a medium bowl, mash 3 ripe bananas with a fork or potato masher until mostly smooth with a few small lumps remaining.
  3. Stir in the melted and cooled ½ cup (115 g) of unsalted butter and 1 large egg until combined.
  4. In a separate bowl, whisk together 1 ½ cups (180 g) all-purpose flour and ¾ cup (150 g) sugar. Add a pinch of salt if using.
  5. Add the dry ingredients to the banana mixture and gently fold together using a spatula or wooden spoon. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, starting to check at 50 minutes by inserting a toothpick into the center. It should come out clean or with a few moist crumbs.
  8. Let the banana bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas with brown spots for best moisture and sweetness. Melt butter and let it cool before mixing with egg to avoid cooking the egg. Do not overmix batter to keep bread tender. Tent with foil if top browns too quickly. Let bread cool before slicing to prevent crumbling.
