A quick and easy protein-packed flatbread made with cottage cheese, perfect for a wholesome snack or light meal. Soft, tender, and flavorful, this flatbread is a nutritious alternative to store-bought snacks.

  • 1 cup (8 oz) cottage cheese (full fat or low fat)
  • 1 ½ cups (6.7 oz) all-purpose flour (or almond flour/gluten-free blend for gluten-free option)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder (optional)
  • 1 large egg (room temperature) or 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water) for egg-free
  • 1 tablespoon olive oil
  • 2 tablespoons fresh herbs (parsley or chives, optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese until smooth using a food processor, blender, or hand blender.
  3. In a mixing bowl, whisk together the flour, baking powder, salt, and garlic powder if using.
  4. In the bowl with blended cottage cheese, add the egg and olive oil. Whisk gently until fully incorporated.
  5. Pour the wet mixture into the dry ingredients and stir until a soft dough forms. If too wet, sprinkle more flour 1 tablespoon at a time.
  6. Fold in chopped fresh herbs if using.
  7. Turn the dough onto a lightly floured surface and roll or press into a 10-inch (25 cm) diameter circle about ¼ inch (6 mm) thick.
  8. Transfer the dough to the prepared baking sheet. Optionally brush lightly with olive oil on top.
  9. Bake for 15-18 minutes until edges are golden and the top springs back when touched.
  10. Let the flatbread cool on a wire rack for a few minutes before slicing.

Notes

If dough is too sticky, chill in the fridge for 15 minutes before shaping. Watch oven temperature carefully to avoid burning or undercooking. For gluten-free, substitute flour with almond or oat flour. Can also cook on skillet or grill pan for a different texture.
