  • ½ cup unsalted butter (113g), softened
  • 3 cups powdered sugar (360g), sifted
  • 1 teaspoon vanilla extract (for frosting)
  • 12 tablespoons heavy cream or milk (for frosting consistency)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. Sift together the dry ingredients: flour, sugar, cocoa powder, baking soda, and salt in a medium bowl.
  3. In a large bowl, whisk together buttermilk, vegetable oil, eggs, vanilla extract, and blue food coloring until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently with a spatula until just combined. Do not overmix.
  5. Stir in white vinegar quickly; the batter may bubble slightly.
  6. Fill cupcake liners about ⅔ full with batter.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla extract, beating until smooth. Add heavy cream or milk as needed for spreading consistency.
