  • Pecans, toasted and chopped

Instructions

  1. Toast the pecans: Heat a dry skillet over medium heat. Add pecans and toast, stirring frequently, for about 4-5 minutes until fragrant and lightly browned. Transfer to a plate to cool.
  2. Crush the cookies: Place chocolate sandwich cookies in a food processor and pulse until finely ground. If no processor, put cookies in a ziplock bag and crush with a rolling pin until fine crumbs form.
  3. Mix cookie crumbs and powdered sugar: In a large bowl, combine crushed cookies with powdered sugar. Stir well to mix evenly.
  4. Add cream cheese, bourbon, and vanilla: Soften cream cheese at room temperature, then add to the cookie mixture along with bourbon and vanilla extract. Mix until fully combined and smooth.
  5. Shape the balls: Scoop about 1 tablespoon of the mixture and roll into balls. Place on a tray lined with parchment paper. Chill for 15 minutes if mixture is sticky.
  6. Roll in toasted pecans: Spread toasted pecans on a shallow plate. Roll each ball gently in nuts until fully coated.
  7. Chill: Refrigerate the bourbon balls for at least 1 hour to firm up before serving.
