  • 1 cup (200g) packed light brown sugar
  • 1/4 cup (85g) honey
  • 2 tablespoons Dijon mustard
  • 810 canned pineapple rings in juice, drained (reserve juice)
  • 1215 whole cloves (optional)
  • 1 teaspoon ground cinnamon
  • Freshly ground black pepper, to taste
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove the ham from packaging and pat dry with paper towels. Peel off any plastic disk covering the bone.
  3. Score the ham surface in a diamond pattern about 1/8-inch (3 mm) deep.
  4. Press one whole clove into the center of each diamond (optional).
  5. Arrange pineapple rings over the ham, securing with toothpicks if needed.
  6. In a bowl, mix brown sugar, honey, Dijon mustard, melted butter, cinnamon, and reserved pineapple juice until smooth.
  7. Brush the glaze generously over the entire ham, making sure to get into the scored grooves and around the pineapple.
  8. Place the ham in a roasting pan with a little water or apple juice in the bottom to keep moist.
  9. Tent loosely with foil and bake for about 1 hour 15 minutes, basting with more glaze every 20 minutes.
  10. Remove foil during the last 15 minutes to let the glaze caramelize and get sticky. Watch carefully to avoid burning.
  11. Check the internal temperature; ham is ready at 140°F (60°C).
  12. Rest the ham for 10 minutes before slicing to let juices redistribute.

Notes

Line the roasting pan with foil for easier cleanup and to catch sticky glaze drips. Apply glaze gradually during baking to prevent burning. Keep the ham moist by adding water or apple juice to the pan. Remove foil only during the last 15 minutes to caramelize the glaze. Use a meat thermometer for best results.
