Ingredients

Scale
  • 2 ½ cups (315g) all-purpose flour, sifted
  • 1 tablespoon culinary-grade matcha powder
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) buttermilk, room temperature (or milk with 1 tablespoon lemon juice as a substitute)
  • ½ teaspoon ground cinnamon (optional)
  • For the Frosting:
  • 1 cup (226g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 1 tablespoon matcha powder
  • 23 tablespoons heavy cream or milk (use dairy-free milk if needed)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Decoration:
  • Edible gold leaf sheets
  • Optional: Fresh edible flowers or gold-dusted chocolate pieces

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
  2. In a medium bowl, sift together the flour, matcha powder, baking powder, baking soda, salt, and cinnamon (if using). Set aside.
  3. Using an electric mixer, beat the softened butter and granulated sugar on medium speed for about 4-5 minutes until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Then, add the vanilla extract.
  5. Alternately add the dry mixture and buttermilk to the batter in three additions, starting and ending with the dry. Mix on low speed just until combined.
  6. Pour the batter evenly into the prepared pans, smoothing the tops with a spatula.
  7. Bake for 30-35 minutes. Use a toothpick to check doneness; it should come out clean or with a few moist crumbs.
  8. Let the cakes rest in the pans for 10 minutes, then transfer onto a cooling rack to cool completely.
  9. Beat the softened butter until creamy. Gradually add the powdered sugar and matcha powder, alternating with cream or milk, until smooth and spreadable. Add vanilla and a pinch of salt.
  10. Place one cake layer on a serving plate. Spread a generous layer of frosting on top. Add the second layer and cover the entire cake with a thin crumb coat. Chill for 15-20 minutes.
  11. Apply the final thick layer of frosting evenly using an offset spatula. Carefully apply edible gold leaf accents with a dry brush or tweezers.
  12. Chill the finished cake in the fridge for about 30 minutes before serving.

Notes

Use ceremonial grade matcha powder for best color and flavor. Room temperature ingredients ensure smooth blending. Avoid overmixing batter to prevent dense cake. Keep frosting chilled to avoid melting. Apply gold leaf carefully with dry tools to prevent tearing. Chill crumb coat before final frosting for clean finish.
