  • 1 cup (25g) dried hibiscus flowers
  • 4 cups (1 liter) water
  • 1/2 to 3/4 cup (100-150g) sugar, honey, or Stevia Sweet Leaf
  • Fresh citrus (lemons, limes, oranges) sliced for garnish and juice
  • About 1 liter sparkling water or club soda
  • Fresh herbs (mint, basil, or rosemary sprigs)
  • Ice cubes
  • Optional flavor boosters: ginger slices, cucumber ribbons, fresh berries

Instructions

  1. Rinse 1 cup (25g) dried hibiscus flowers under cold water.
  2. In a saucepan, bring 4 cups (1 liter) water to a boil.
  3. Add hibiscus flowers and reduce heat to a simmer. Let simmer for 10 minutes until the water turns deep red.
  4. Remove from heat and strain the liquid through a fine mesh sieve into a heatproof bowl or pitcher.
  5. Stir in 1/2 to 3/4 cup (100-150g) sugar or preferred sweetener until dissolved. Let cool to room temperature.
  6. Slice lemons, limes, and oranges thinly. Pick fresh mint or basil leaves. Prepare optional ginger slices, cucumber ribbons, or fresh berries and chill.
  7. Place the hibiscus syrup in a dispenser or pitcher. Arrange sparkling water, garnishes, ice bucket, glasses, and stirrers nearby for self-service.
  8. Guests build their drinks by filling glasses with ice, adding 2-3 ounces (60-90 ml) hibiscus syrup, topping with sparkling water, and finishing with fresh citrus and herbs.

Notes

Do not over-simmer hibiscus to avoid bitterness; simmer for 10 minutes max. Sweeten syrup gradually to balance tartness. Chill syrup and sparkling water thoroughly before serving. Prepare syrup and garnishes ahead to save time. Adjust syrup quantity to taste. Leftover syrup stores up to 2 weeks refrigerated and can be frozen in ice cube trays.
