A quick, keto-friendly recipe featuring tender steak bites seared in garlic butter paired with crisp asparagus, perfect for busy weeknights or low-carb meals.

  • 1 pound sirloin or ribeye steak, cut into 1-inch cubes
  • 1 bunch asparagus (about 12 ounces), trimmed and cut into 2-inch pieces
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 teaspoon fresh lemon juice

Instructions

  1. Pat the steak cubes dry with paper towels. Trim the asparagus ends and cut into 2-inch pieces. Set both aside.
  2. Season the steak cubes generously with salt and freshly ground black pepper.
  3. Heat a heavy skillet or cast iron pan over medium-high heat and add the olive oil. Heat until shimmering but not smoking, about 2 minutes.
  4. Add the steak cubes in a single layer without crowding. Cook undisturbed for 2-3 minutes to form a crust, then flip and cook another 2-3 minutes for medium-rare. Remove steak from skillet and set aside on a warm plate.
  5. In the same skillet, add 1 tablespoon butter and the asparagus. Toss and cook until bright green and just tender, about 3-4 minutes.
  6. Push asparagus to one side of the skillet. Add remaining 2 tablespoons butter and minced garlic to the empty space. Stir garlic gently until fragrant, about 30 seconds, being careful not to burn it.
  7. Return steak bites to the skillet and toss gently to coat everything in the garlic butter sauce. Cook together for 1-2 minutes to meld flavors.
  8. Remove skillet from heat. Stir in fresh lemon juice and chopped parsley.
  9. Plate the steak bites and asparagus. Spoon any extra garlic butter from the pan on top before serving.

Notes

Pat steak dry before searing to get a good crust. Avoid overcrowding the pan to prevent steaming. Add garlic after asparagus to avoid burning. Let steak rest briefly after cooking to retain juices. If garlic butter browns too fast, reduce heat and stir frequently.
