  • 4 salmon fillets (6 ounces each, skin-on)
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 4–5 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup low-sodium chicken or vegetable broth
  • 1 lemon (zest and juice)
  • 1 teaspoon dried parsley
  • Kosher salt and freshly cracked black pepper
  • Flaky sea salt (for finishing)
  • Fresh parsley (for garnish)

Instructions

  1. Pat salmon fillets dry with paper towels and season both sides generously with kosher salt and black pepper.
  2. Heat a large skillet over medium-high heat. Add 1 tablespoon butter and 1 tablespoon olive oil.
  3. Place salmon fillets in the pan skin-side down. Press gently for 10 seconds to prevent curling.
  4. Cook undisturbed for 4-5 minutes until skin is crispy and golden. Flip and cook for 2-3 minutes more. Remove salmon and set aside.
  5. Reduce heat to medium. Add remaining 1 tablespoon butter to the pan.
  6. Add minced garlic and sauté for 30-60 seconds until fragrant but not brown.
  7. Pour in heavy cream and broth, scraping up browned bits from the bottom of the pan.
  8. Simmer gently for 3-4 minutes until sauce thickens slightly.
  9. Remove from heat. Stir in lemon zest, lemon juice, and dried parsley. Adjust seasoning.
  10. Return salmon to the pan, spooning sauce over the top. Let sit for 30 seconds to reheat.
  11. Serve immediately, garnished with fresh parsley and lemon wedges.

Notes

Ensure salmon is completely dry before searing to achieve crispy skin. Do not overcrowd the pan; cook in batches if necessary. If the sauce splits, whisk in a tablespoon of cold water to bring it back together. Salmon is done at 145°F, but many prefer 125-130°F for a moist center.
