  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 can (16 ounces) refried beans
  • 1 cup sour cream (full-fat)
  • 1/2 cup mayonnaise
  • 1 packet (1 ounce) taco seasoning
  • 2 cups shredded Mexican blend cheese
  • 1 cup pico de gallo
  • 1 can (4 ounces) diced green chiles
  • 1/2 cup sliced black olives (drained)
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, sliced (optional)
  • Tortilla chips for serving

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it apart, until no longer pink (6-8 minutes). Drain excess fat, leaving about 1 tablespoon.
  2. Reduce heat to medium. Add chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Cook for 1 minute until fragrant. Remove from heat and let cool for 10-15 minutes.
  3. In a small bowl, stir refried beans with a fork until smooth. If too thick, add 1 tablespoon water or beef broth. Spread evenly in the bottom of a 9×13-inch dish.
  4. In a separate bowl, combine sour cream, mayonnaise, and taco seasoning. Mix until smooth. Spread gently over the bean layer.
  5. Sprinkle cooled ground beef evenly over the sour cream layer. Press down lightly with a spatula.
  6. Sprinkle shredded Mexican blend cheese over the beef.
  7. Spoon pico de gallo and diced green chiles over the cheese, spreading evenly.
  8. Scatter sliced black olives and jalapeño slices (if using) on top. Garnish with fresh cilantro.
  9. Cover with plastic wrap and refrigerate for at least 30 minutes (up to 24 hours) to let flavors meld.
  10. Let sit at room temperature for 15 minutes before serving with tortilla chips.

Notes

Cool the beef completely before layering to prevent the sour cream from melting. For best results, make ahead and refrigerate overnight. Use room temperature sour cream for easier spreading. Shred your own cheese for better melting.
