Ingredients

  • Little Smokies (14 oz package)
  • Thin-Cut Bacon (1 lb)
  • Brown Sugar (1 cup, packed)
  • Optional Pinch of Cayenne or Black Pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil or parchment paper, then place a wire rack on top. Spray the rack lightly with nonstick cooking spray to prevent sticking.
  2. Cut each bacon slice into thirds. You want each piece to be about 2-3 inches long, just enough to wrap around a smokie once.
  3. Pour the brown sugar into a shallow bowl. If you’re adding cayenne or black pepper, mix it into the sugar now. Use your fingers to break up any clumps so the sugar is easy to work with.
  4. Take one piece of bacon and wrap it around one smokie. The bacon should overlap just slightly. Secure it with a toothpick pushed through the overlapping ends. Don’t wrap too tightly—the bacon will shrink as it cooks, and if it’s too tight, it can squeeze the smokie.
  5. Roll the wrapped smokie in the brown sugar. Press gently so the sugar sticks to the bacon on all sides. Don’t be shy here—you want a good coating.
  6. Place the sugared smokie on the wire rack, toothpick side up or slightly angled so it doesn’t touch the rack. Repeat with the remaining smokies, spacing them about half an inch apart.
  7. Bake for 25-30 minutes, or until the bacon is crispy and the brown sugar has melted into a bubbling glaze. At the 15-minute mark, check on them. If some are browning faster than others, rotate the pan.
  8. Let them rest for 5 minutes before serving. The glaze will be extremely hot straight out of the oven, and letting them cool slightly allows the sugar to set into that perfect sticky coating. Remove the toothpicks before serving, or leave them in for easy grabbing—just warn your guests.

Notes

Don’t skip the wire rack. Watch the sugar closely toward the end. Use thin bacon, not thick-cut. Let them rest before serving. Make extra.
