  • 1/2 cup (60g) all-purpose flour (for streusel)
  • 1/4 cup (50g) granulated sugar (for streusel)
  • 1/4 cup (50g) packed brown sugar (for streusel)
  • 1/2 teaspoon cinnamon (for streusel)
  • 1/4 cup (55g) unsalted butter, cold and cubed (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease thoroughly.
  2. In a small bowl, combine 1/2 cup flour, 1/4 cup granulated sugar, 1/4 cup brown sugar, and 1/2 teaspoon cinnamon. Add cold cubed butter and work it in with a fork or fingers until coarse crumbs form. Refrigerate until ready to use.
  3. In a medium bowl, whisk together 2 cups flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  4. In a large bowl, whisk together melted butter, granulated sugar, brown sugar, eggs, pumpkin puree, and vanilla extract until smooth.
  5. Add dry ingredients to wet ingredients and gently fold together with a spatula until just combined. Do not overmix.
  6. Divide batter evenly among muffin cups, filling each about 3/4 full.
  7. Sprinkle the cold streusel mixture generously over each muffin, pressing slightly to adhere.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Rotate pan halfway through if needed.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use cold butter for the streusel to ensure a crunchy texture. Do not overmix the batter to avoid dense muffins. Spoon and level flour for accurate measurements. For a taller dome, start oven at 400°F for 5 minutes then reduce to 350°F.
