These crispy bacon-wrapped jalapeño popper bites are the perfect game-day appetizer, featuring a creamy cheese filling and a kick of heat. Quick and easy to make, they disappear fast at any gathering.

  • 8 ounces cream cheese, softened to room temperature
  • 1 cup sharp cheddar cheese, freshly shredded
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (optional)
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 810 medium jalapeños
  • 1 pound thin-cut bacon
  • 1 tablespoon olive oil (optional, for brushing bacon)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire cooling rack on top. Spray the rack lightly with nonstick cooking spray.
  2. Wearing gloves, rinse the jalapeños and pat them dry. Slice off the stems, then cut each pepper into 1-inch thick rings. Remove the seeds and white membranes from each ring. You’ll need about 24-30 rings total.
  3. In a small mixing bowl, combine the softened cream cheese, shredded cheddar, sour cream, garlic powder, smoked paprika, onion powder, and a pinch of black pepper. Stir until smooth and fully combined.
  4. Using a small spoon or a piping bag, fill each jalapeño ring with the cream cheese mixture. Don’t overfill—the filling should be flush with the edges of the pepper.
  5. Cut each bacon slice in half crosswise. Take one half-slice of bacon and wrap it tightly around each filled jalapeño ring, overlapping the ends slightly. Place each wrapped ring seam-side down on the wire rack.
  6. Bake for 18-22 minutes, or until the bacon is crispy and dark golden brown. For extra crispiness, switch the oven to broil for the last 1-2 minutes, watching closely.
  7. Remove from the oven and let the poppers rest on the wire rack for 3-5 minutes. Transfer to a serving platter, garnish with chopped fresh chives or a sprinkle of smoked paprika if desired, and serve warm.

Notes

For milder bites, remove all seeds and membranes. For extra heat, leave some seeds in. If using thick-cut bacon, par-cook it for 3-4 minutes in the microwave before wrapping. To make ahead, assemble up to step 5 and refrigerate; add 2-3 minutes to baking time. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5-7 minutes.
