  • 810 large flour tortillas (burrito-sized)
  • 1/2 pound deli turkey breast (oven-roasted or honey-roasted, sliced about 1/8 inch thick)
  • 46 slices provolone, cheddar, or Swiss cheese
  • 4 ounces block cream cheese, softened
  • Salt and pepper to taste
  • 2 tablespoons finely chopped fresh spinach (optional)
  • 1 teaspoon dried dill or Italian seasoning (optional)
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Soften your cream cheese: Take the cream cheese out of the fridge about 15 minutes before you start. You want it soft enough to spread like butter, not cold and lumpy. If in a rush, microwave for 5-10 seconds but watch carefully.
  2. Prep your workspace: Lay out a large cutting board or clean counter space. Have your tortillas, turkey, cheese, and cream cheese spread within reach.
  3. Spread the cream cheese: Lay one tortilla flat on the board. Using a butter knife or offset spatula, spread a thin, even layer of cream cheese over the entire surface, all the way to the edges. The layer should be about 1/8 inch thick.
  4. Layer the turkey: Place 3-4 slices of turkey flat on top of the cream cheese, covering the surface but leaving a 1-inch border around the edges. Overlap the slices slightly.
  5. Add the cheese: Lay 1-2 slices of cheese on top of the turkey, again leaving a 1-inch border.
  6. Season lightly: Sprinkle a tiny pinch of salt and a crack of pepper over the cheese.
  7. Roll it up tightly: Starting at the edge closest to you, fold the tortilla over the filling, tucking it in firmly. Then roll it away from you, keeping the roll tight. When you reach the end, press down gently to seal.
  8. Wrap in plastic: Place the rolled wrap in the center of a piece of plastic wrap. Fold the sides over the ends, then roll it up tightly, twisting the ends like a candy wrapper.
  9. Flash freeze (optional but recommended): Place the wrapped wraps on a baking sheet in a single layer. Freeze for 30 minutes.
  10. Bag and label: Transfer the frozen wraps to a freezer-safe Ziploc bag. Squeeze out as much air as possible before sealing. Label with the date and filling. They’ll keep for up to 3 months.

Notes

The cream cheese barrier is essential—do not substitute with mayonnaise as it separates in the freezer. Do not overfill; use a thin, even layer of filling. Let wraps thaw naturally in the lunchbox; do not microwave. For best results, freeze for at least a week before eating to allow flavors to meld.
