This funfetti birthday sheet cake is tender, moist, and packed with colorful sprinkles. Topped with a light vanilla buttercream, it’s the perfect celebration cake that comes together in just 30 minutes of active prep.

  • 2 ½ cups (315g) all-purpose flour
  • 1 ¾ cups (350g) granulated sugar
  • 1 cup (226g) unsalted butter, softened
  • 3 large eggs, room temperature
  • 1 cup (240ml) buttermilk, room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ½ cup (80g) rainbow sprinkles (jimmies)
  • 1 ½ cups (339g) unsalted butter, softened (for buttercream)
  • 4 cups (480g) powdered sugar, sifted (for buttercream)
  • 3–4 tablespoons heavy cream (for buttercream)
  • 2 teaspoons vanilla extract (for buttercream)
  • ¼ teaspoon salt (for buttercream)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment paper, leaving overhang on the long sides.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat softened butter and sugar on medium speed for 3-4 minutes until pale and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. With mixer on low, add dry ingredients in thirds, alternating with buttermilk, beginning and ending with dry ingredients. Mix just until combined.
  6. Gently fold in rainbow sprinkles with a rubber spatula.
  7. Pour batter into prepared pan and spread evenly. Bake for 25-30 minutes, until a toothpick inserted in center comes out with moist crumbs.
  8. Cool in pan for 10 minutes, then lift onto a wire rack to cool completely (at least 1 hour).
  9. For buttercream: Beat softened butter on medium speed for 5 minutes until pale and fluffy. Add vanilla and salt. Gradually add sifted powdered sugar, beating on low. Add heavy cream and beat on medium-high for 3 minutes.
  10. Once cake is completely cool, spread buttercream evenly over top. Decorate with additional sprinkles if desired.

Notes

Use jimmies (long sprinkles) not nonpareils to prevent color bleeding. Room temperature ingredients are crucial for best texture. Cake can be made a day ahead; flavors develop overnight.
