  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 ¾ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup walnuts, roughly chopped (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease the ends.
  2. Toast the walnuts on a baking sheet for 5-7 minutes until fragrant and lightly golden. Set aside to cool.
  3. In a large bowl, mash the bananas with a fork until mostly smooth with a few small lumps.
  4. Add pumpkin puree, melted butter, granulated sugar, brown sugar, eggs, and vanilla extract to the mashed bananas. Whisk until smooth and well combined.
  5. In a separate bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda, and salt.
  6. Pour dry ingredients into wet mixture. Fold gently with a rubber spatula until just combined (a few streaks of flour are okay).
  7. Gently fold in the toasted walnuts, reserving about ¼ cup for topping.
  8. Pour batter into prepared loaf pan and spread evenly. Sprinkle reserved walnuts on top, pressing lightly.
  9. Bake for 55-65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  10. Cool in pan for 15 minutes, then lift out using parchment paper and transfer to a wire rack to cool completely (at least 1 hour) before slicing.

Notes

Don’t overmix the batter to avoid tough bread. Let the bread cool completely before slicing to prevent crumbling. Toasting the walnuts enhances their flavor. For best results, use room temperature eggs and slightly cooled melted butter.
