Instructions

  1. Preheat your oven to 375°F (190°C). Place a baking sheet on the lower rack to catch any potential bubble-overs.
  2. In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, cornstarch, lemon juice, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Stir gently until everything is well coated. Let the mixture sit for about 10 minutes while you make the biscuit dough.
  3. In another large bowl, whisk together the flour, 1/3 cup sugar, baking powder, baking soda, and salt. Add the cold butter cubes to the flour mixture. Using a pastry cutter or two forks, cut the butter into the flour until the mixture resembles coarse meal with some pea-sized butter pieces remaining.
  4. Pour the cold buttermilk into the flour-butter mixture. Stir with a fork or spatula just until the dough comes together. It will look shaggy and a little sticky.
