Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, salt, and ground cinnamon.
  3. In a large bowl, cream softened butter with 1 cup (200 grams) granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in pumpkin puree, egg, and vanilla extract until combined.
  5. Gradually mix dry ingredients into wet ingredients until fully incorporated, forming a soft, pliable dough.
  6. In a small bowl, combine ¼ cup (50 grams) granulated sugar with 2 teaspoons ground cinnamon for coating.
  7. Using a cookie scoop or tablespoon, scoop dough balls about 1 ½ tablespoons (approx. 20 grams) each.
  8. Roll each dough ball first in the cinnamon sugar mixture, flatten slightly with your palm, then roll again to coat thoroughly.
  9. Place cookies 2 inches apart on baking sheets and bake for 12-14 minutes until edges are set but centers remain soft.
  10. Let cookies rest on baking sheets for 5 minutes before transferring to a cooling rack to cool completely.

Notes

For chewier cookies, do not overbake; remove when edges are set but centers look soft. Chill dough for 30 minutes if cookies spread too much. Use room temperature ingredients for best texture.
