  • 1 lb (450g) Ground Beef (80/20 lean-to-fat ratio)
  • 2 Large Eggs
  • 1 cup (120g) Plain dry breadcrumbs
  • 1/2 cup (120ml) Whole milk
  • 1 medium Yellow Onion, finely diced
  • 2 cloves Garlic, minced
  • 1/2 cup (120g) Ketchup
  • 1/4 cup (50g) Brown sugar
  • 1 tsp Worcestershire sauce
  • Salt and Black Pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and center the rack.
  2. In a large mixing bowl, combine breadcrumbs and milk; let sit for 5 minutes to form a panade.
  3. Finely dice the onion and mince the garlic. Sauté in butter until soft (optional) or use raw.
  4. Add ground beef, eggs, onions, garlic, Worcestershire sauce, salt, and pepper to the panade. Mix gently with hands until just combined.
  5. Transfer mixture to a 9×5 inch loaf pan, pressing down gently to remove air pockets and smoothing the top.
  6. Whisk together ketchup and brown sugar in a small bowl.
  7. Spread half of the glaze over the raw meatloaf. Place pan on a sheet pan and bake for 40 minutes.
  8. Remove from oven and spread remaining glaze over the top. Bake for another 20-25 minutes.
  9. Check internal temperature; it should reach 160°F (71°C).
  10. Remove from oven and let rest for 10 minutes before slicing.

Notes

Do not overmix the meat to avoid a tough texture. Use a thermometer to ensure doneness without cutting into the loaf. Letting the meatloaf rest for 10 minutes is crucial for juicy slices. For a crispier top, broil for the last 2 minutes.
