  • 2 medium yellow onions, finely diced
  • 3 stalks celery, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 2 cups chicken or seafood stock (low-sodium)
  • 1 cup heavy cream
  • 1.5 lbs Yukon Gold potatoes, peeled and cubed
  • 2 (6.5 oz) cans chopped clams, liquid reserved
  • 1/4 cup fresh parsley, chopped
  • Black pepper, freshly cracked, to taste
  • Salt, to taste (optional)

Instructions

  1. Dice onions and celery finely, mince garlic, and cube potatoes into half-inch pieces.
  2. Melt butter in a Dutch oven over medium heat. Add onions and celery, cooking for 5-7 minutes until soft and translucent.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Sprinkle flour over vegetables and stir constantly for 2 minutes to cook out the raw flour taste.
  5. Slowly pour in chicken stock while whisking constantly to prevent lumps. Bring to a gentle simmer and cook for 5 minutes until thickened.
  6. Add cubed potatoes and reserved clam liquid. Bring to a boil, then reduce heat to low, cover, and simmer for 10-15 minutes until potatoes are tender.
  7. Stir in chopped clams and their bits. Pour in heavy cream and heat gently for 3-5 minutes. Do not boil.
  8. Season with black pepper and salt if needed. Stir in half the parsley and serve immediately.

Notes

Do not boil the soup after adding cream to prevent curdling. If the soup is too thick, add a splash of milk or stock. For a gluten-free version, substitute all-purpose flour with a gluten-free blend or arrowroot powder. Leftovers store well in the fridge for up to 3 days.
