  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly butter your baking dish or ramekins to prevent sticking.
  2. Wash and halve the peaches, then remove the pits. Toss them gently with lemon juice and a pinch of salt in a bowl to brighten their flavor. Set aside.
  3. In a medium bowl, combine the mascarpone cheese, honey, and vanilla extract. Stir until smooth and creamy. Taste and adjust honey if you want a sweeter spread. Cover and refrigerate until ready to serve.
  4. In another bowl, mix the crushed graham crackers with melted butter and cinnamon. Use a fork or your fingers to combine until the mixture looks sandy and moist.
  5. Place the peach halves cut side up in the prepared dish. Spoon a heaping teaspoon of the crumble over each peach half, ensuring an even coating.

  7. Remove from oven and let cool for 5 minutes. Spoon a generous dollop of honey mascarpone over each peach half. Drizzle a little extra honey on top if desired.
