  • 1 tablespoon unsalted butter, melted (for topping)

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. Add cold, cubed unsalted butter to the dry mixture. Use a pastry blender or forks to cut the butter into the flour until it resembles coarse crumbs with pea-sized butter pieces.
  4. In a separate bowl, whisk together pumpkin puree, heavy cream, egg, and vanilla. Pour into the dry ingredients and gently fold until the dough comes together. Do not overmix.
  5. Turn dough onto a lightly floured surface and gently press into a 1-inch thick disk. Do not knead.
  6. Cut the disk into 8 equal wedges and place on the baking sheet, leaving 2 inches of space between each.
  7. Brush tops lightly with heavy cream or melted butter. Mix topping sugar and cinnamon, then sprinkle generously over the scones.
  8. Bake for 18-22 minutes until golden brown and a toothpick inserted in the center comes out clean.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely or serve warm.

Notes

Ensure butter is cold for flaky layers. Do not overmix the dough to avoid tough scones. If using gluten-free flour, add xanthan gum if not included in the blend. Store leftovers in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
