  • 1/4 teaspoon salt
  • 3/4 cup whole or 2% milk (room temperature)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine sliced peaches, brown sugar, granulated sugar, ground cinnamon, lemon juice, and 1/4 cup all-purpose flour. Stir gently to coat the peaches evenly and set aside for about 10 minutes.
  3. Transfer the peach mixture into a 9×13-inch baking dish, spreading it out evenly.
  4. In a medium bowl, whisk together 1 1/2 cups all-purpose flour, baking powder, salt, 2 tablespoons brown sugar, and 1 teaspoon ground cinnamon.
  5. Add the cold butter pieces to the flour mixture and cut in with a pastry cutter or two knives until the mixture resembles coarse crumbs with pea-sized bits.
  6. Add milk and vanilla extract (if using) to the dry ingredients and stir gently just until combined; the dough will be slightly sticky.
  7. Drop spoonfuls of the biscuit dough over the peach filling, covering unevenly to create rustic peaks and valleys.
  8. Bake uncovered for 35 to 40 minutes until the biscuit topping is golden brown and the peach filling is bubbling around the edges. Tent with foil if topping browns too quickly.
  9. Remove from oven and let cool for at least 15 minutes before serving.

Peel peaches easily by scoring an X on the bottom, blanching in boiling water for 30 seconds, then plunging into ice water. Use cold butter for flaky biscuit topping.
