  • 8 slices thick-cut bread (Texas toast or brioche recommended)

  • Maple syrup (optional)

Instructions

  1. Chill mixing bowl and beaters. Beat cold heavy cream with powdered sugar, cinnamon, and vanilla extract on medium-high speed until soft peaks form (3-4 minutes). Refrigerate until ready to serve.
  2. Heat butter in skillet over medium heat until melted. Add brown sugar, cinnamon, and nutmeg, stirring to combine. Lay peach slices in a single layer and cook about 3 minutes per side until golden and caramelized. Remove from heat and keep warm.
  3. In a large shallow bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until smooth.
  4. Dip each bread slice into the batter, soaking about 20 seconds per side. Adjust soaking time based on bread freshness and density.
  5. Heat butter or oil in a clean skillet over medium heat. Cook soaked bread slices 3-4 minutes per side until golden brown and crisp. Cook in batches if needed. Keep cooked slices warm in a low oven (200°F).
  6. Arrange French toast on plates, spoon caramelized peaches over the top, and dollop with cinnamon whipped cream. Drizzle with maple syrup if desired.

Notes

Use day-old or slightly stale bread like Texas toast or brioche for best results. Chill bowl and beaters before whipping cream to avoid separation. Control heat to prevent burning sugar when caramelizing peaches. If caramelized peach mixture thickens too much, add a splash of water or lemon juice to loosen.
