  • 1 1/2 teaspoons pumpkin pie spice
  • 2 cups neutral oil (for frying)
  • 1/2 cup granulated sugar (for coating)
  • 1 teaspoon cinnamon (for coating)

Instructions

  1. Mix the coating ingredients (1/2 cup sugar and 1 teaspoon cinnamon) in a large bowl and set aside. Line a plate with paper towels.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and pumpkin pie spice.
  3. In a separate bowl, whisk the melted butter, egg, sugar, and milk until smooth. Stir in the pumpkin puree.
  4. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Do not overmix.
  5. Heat about 2 inches of neutral oil in a heavy-bottomed skillet or Dutch oven over medium heat until it reaches 375°F (190°C).
  6. Drop tablespoon-sized portions of batter into the hot oil, frying 4-5 at a time to avoid overcrowding.
  7. Fry for 1-2 minutes per side, flipping gently, until golden brown and cooked through.
  8. Remove donut holes with a slotted spoon, let excess oil drip off, and immediately toss in the cinnamon sugar mixture.
  9. Place coated donuts on the paper towel-lined plate to drain. Serve warm.

Notes

Ensure oil is at 375°F (190°C) to prevent greasy donuts. Do not overmix the batter to avoid tough donuts. If using fresh pumpkin, ensure it is mashed very smooth. For a baked option, scoop batter into a mini muffin tin and bake at 375°F for 8-10 minutes.
