A comforting, slow-cooker taco soup that combines ground beef, ranch dressing mix, and corn for a creamy, savory meal that practically cooks itself.

  • 1 pound (450g) ground beef (80/20 or 93/7)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 packet (1 oz/28g) taco seasoning (low-sodium recommended)
  • 1 packet (0.7 oz/20g) dry ranch dressing mix
  • 2 cups (480ml) beef broth (low-sodium)
  • 1 can (14.5 oz/411g) diced tomatoes, undrained
  • 1 can (15 oz/425g) black beans, rinsed and drained
  • 1 cup (150g) frozen corn or 1 can (15 oz/425g) drained
  • 1 can (10 oz/283g) diced tomatoes and green chilies (Rotel)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and diced onion, cooking until beef is no longer pink and onions are translucent (5-7 minutes). Drain excess fat.
  2. Add minced garlic to the skillet during the last minute of cooking, stirring constantly to prevent burning.
  3. Transfer the beef and onion mixture to a 6-quart slow cooker.
  4. Add black beans, corn, diced tomatoes, Rotel, beef broth, taco seasoning, and dry ranch dressing mix. Stir well to combine.
  5. Cover and cook on Low for 4-6 hours or High for 3-4 hours.
  6. Once cooked, stir well, taste for seasoning, and adjust if needed.
  7. Ladle into bowls and top with shredded Mexican blend cheese, sour cream, and fresh cilantro. Serve immediately.

Notes

For best results, brown the beef first to develop flavor. Rinse beans to remove excess sodium. Let the soup rest for 10 minutes after cooking to allow flavors to meld. If the soup is too thick, add extra broth; if too thin, cook uncovered on High for 30 minutes.
