Ingredients

Scale
  • 1 cup (240g) canned pumpkin puree
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • 1/2 teaspoon (2g) baking powder
  • 1/2 teaspoon (3g) salt
  • 3/4 cup (150g) granulated sugar
  • 1 1/2 teaspoons (3g) pumpkin pie spice
  • 1/2 teaspoon (1g) cinnamon
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper for easy removal.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon.
  3. In a large bowl, whisk vegetable oil, sugar, eggs, and vanilla until smooth. Add pumpkin puree and whisk until fully incorporated.
  4. Pour dry ingredients into wet ingredients. Mix gently with a whisk or spatula until just combined; do not overmix.
  5. Fold in chocolate chips gently with a spatula.
  6. Pour batter into prepared pan and smooth the top. Bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Do not overmix the batter to avoid a tough texture. Ensure you use plain pumpkin puree, not pumpkin pie filling. For best results, let the bread cool completely before slicing to prevent a gummy interior. Can be stored at room temperature for 3 days or frozen for up to 3 months.
