  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (28 oz / 800g) crushed tomatoes (preferably San Marzano)
  • 4 cups (960ml) low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ¼ teaspoon red pepper flakes (optional)
  • 8 oz (225g) lasagna noodles, broken into 2-inch pieces
  • ½ cup (120g) whole-milk ricotta cheese
  • 1 cup (120g) shredded whole-milk mozzarella cheese
  • ¼ cup (25g) freshly grated Parmesan cheese
  • Fresh parsley or basil for garnish (optional)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil (divided)

Instructions

  1. Brown the Ground Turkey: Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add ground turkey and cook, breaking it apart, until browned and cooked through (5-7 minutes). Transfer to a plate and set aside.
  2. Sauté the Aromatics: Reduce heat to medium. Add remaining 1 tablespoon olive oil. Add diced onion and cook until soft and translucent (about 4 minutes). Add minced garlic and cook 30 seconds until fragrant.
  3. Build the Broth: Pour in crushed tomatoes and chicken broth. Add dried oregano, dried basil, red pepper flakes (if using), and a pinch of salt and pepper. Bring to a boil, then reduce heat to low and simmer for 10 minutes.
  4. Cook the Noodles: Add broken lasagna noodles to the pot, stirring to submerge. Cook for 10-12 minutes, stirring occasionally, until noodles are tender but still al dente.
  5. Combine and Simmer: Return cooked ground turkey to the pot. Stir and simmer for 5 minutes. Adjust seasoning with salt, pepper, or herbs as needed.
  6. Prepare the Cheese Topping: In a small bowl, mix together ricotta cheese, half of the shredded mozzarella, and half of the grated Parmesan.
  7. Serve and Garnish: Ladle hot soup into bowls. Top each with a dollop of the ricotta mixture, then sprinkle remaining mozzarella and Parmesan. Garnish with fresh parsley or basil. Serve immediately.

Notes

The soup will thicken as it sits because the noodles continue to absorb liquid. If reheating leftovers, add a splash of chicken broth or water to thin it back to desired consistency. For best results, brown the turkey well and build flavor in layers by seasoning at each stage.
