Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light, fluffy, and pale (about 3-5 minutes).
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract and pumpkin puree.
  4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until the flour disappears. Do not overmix.
  6. Spread the thick, sticky dough evenly into the prepared pan.
