  • 1 lb Italian sausage (casings removed)
  • 1.5 lbs Yukon Gold potatoes (diced into ½-inch cubes)
  • 1 large bunch kale (stems removed and leaves chopped)
  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)
  • 4 cups chicken broth (low-sodium)
  • ½ cup half-and-half
  • 1 teaspoon dried thyme
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper (to taste)
  • 1 tablespoon olive oil

Instructions

  1. Cook the Sausage: Heat a large Dutch oven over medium-high heat. Add olive oil, then crumble the sausage into the pot. Cook until browned and cooked through, about 6-8 minutes. Use a slotted spoon to transfer the sausage to a bowl and set aside. Leave about 2 tablespoons of drippings in the pot.
  2. Sauté the Aromatics: Reduce heat to medium. Add diced onion to the pot and cook until soft and translucent, about 4-5 minutes, scraping up browned bits. Add minced garlic and cook for 30 seconds until fragrant.
  3. Bloom the Spices: Sprinkle in dried thyme and red pepper flakes (if using). Stir for 30 seconds until fragrant.
  4. Add the Potatoes and Broth: Add diced potatoes and chicken broth. Bring to a boil over high heat, then reduce to a simmer. Cover and cook for 15 minutes until potatoes are fork-tender.
  5. Add the Kale: Stir in chopped kale. Cover and simmer for 5 minutes until kale is tender but still bright green.
  6. Finish with Cream and Sausage: Reduce heat to low. Stir in half-and-half and cooked sausage. Warm through for 2-3 minutes without boiling. Season with salt and pepper to taste.
  7. Serve: Ladle into bowls and finish with black pepper, a drizzle of olive oil, or grated Parmesan if desired.

Notes

For a dairy-free version, substitute half-and-half with full-fat coconut milk or unsweetened oat milk. To thicken the soup without cream, mash some potatoes against the side of the pot. For freezing, leave out the cream and potatoes; add fresh when reheating.
