  • 23 lbs Beef Chuck Roast, cut into 1.5-inch cubes
  • 1 cup Dry Red Wine (Cabernet Sauvignon, Merlot, or Pinot Noir)
  • 2 cups Low-sodium Beef Broth
  • 3 Large Carrots, peeled and chopped into chunks
  • 2 lbs Yukon Gold Potatoes, cut into cubes
  • 1 Large Onion, diced
  • 4 Cloves Garlic, minced
  • 2 tbsp Tomato Paste
  • 2 tbsp All-Purpose Flour
  • 2 Bay Leaves
  • 1 tsp Dried Thyme (or 2 sprigs fresh)
  • 1 tbsp Worcestershire Sauce
  • 2 tbsp Butter
  • Salt and Black Pepper, to taste

Instructions

  1. Pat beef cubes dry and toss with flour, salt, and pepper until evenly coated.
  2. Heat butter in a large skillet over medium-high heat. Brown beef in batches until a deep golden crust forms (2-3 minutes per side). Remove and set aside.
  3. In the same skillet, sauté onions and carrots for 3-4 minutes until softened. Add garlic and tomato paste, stirring for 1 minute until fragrant.
  4. Deglaze the pan with red wine, scraping up browned bits. Simmer for 2 minutes to cook off alcohol.
  5. Place browned beef, onion/carrot mixture, potatoes, bay leaves, thyme, and Worcestershire sauce into the slow cooker.
  6. Pour in beef broth. Stir gently; liquid should come halfway up the meat.
  7. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours until beef is fork-tender.
  8. Remove bay leaves. Taste and adjust seasoning. If sauce is too thin, mix 1 tbsp cornstarch with 1 tbsp water and stir in, cooking on HIGH for 30 minutes to thicken.

Notes

Do not skip browning the beef for maximum flavor. Cut vegetables uniformly for even cooking. Avoid lifting the lid frequently during cooking. Stews often taste better the next day as flavors meld. Can be frozen for up to 3 months.
