  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 3 large carrots, peeled and sliced
  • 3 ribs celery, sliced
  • 2 medium potatoes (Yukon Gold or Russet), peeled and cubed
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 4 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 tablespoon apple cider vinegar
  • Fresh parsley for garnish

Instructions

  1. Pat the chuck roast dry with paper towels. Cut into 2-inch chunks, removing large pieces of fat. Season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Working in batches, sear the beef chunks for 2-3 minutes per side until deeply browned. Transfer to the slow cooker.
  3. Reduce heat to medium. Add diced onion to the same skillet and cook for 3-4 minutes until soft and translucent, scraping up browned bits. Add minced garlic and cook for 30 seconds. Transfer to the slow cooker.
  4. Pour about 1/2 cup of beef broth into the hot skillet and scrape up remaining browned bits. Pour this liquid into the slow cooker.
  5. Add sliced carrots, celery, cubed potatoes, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and bay leaves to the slow cooker. Pour in remaining beef broth and stir.
  6. Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours until beef is fork-tender and vegetables are soft.
  7. About 30 minutes before serving, use two forks to shred the beef chunks right in the slow cooker.
  8. Stir in frozen peas and frozen corn. Let heat through for about 10 minutes.
  9. Remove bay leaves. Stir in apple cider vinegar. Taste and adjust seasoning with salt and pepper. Ladle into bowls and garnish with fresh parsley.

Notes

Don’t skip searing the beef—it creates deep flavor. Add frozen vegetables at the end to keep them bright. Let the soup rest on WARM for 30 minutes before serving for best flavor. For a thicker soup, mash some potatoes against the side of the slow cooker before serving.
