A comforting, quick weeknight meal that combines the flavors of lasagna into a hearty soup. This slow cooker recipe uses simple pantry staples and ricotta cheese for a creamy, satisfying dish ready in under 15 minutes of prep.

  • 1 pound (450g) lean ground beef (90/10 or 93/7)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups (480ml) tomato sauce or marinara sauce (no added sugar)
  • 2 cups (480ml) beef broth (low-sodium)
  • 810 dry lasagna noodles, broken into 2-inch pieces
  • 1 tablespoon dried Italian seasoning
  • 1 cup (240g) whole milk ricotta cheese
  • 1 cup (120g) shredded mozzarella cheese
  • 1/4 cup (25g) grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook until browned, breaking into crumbles. Drain excess fat if necessary.
  2. Add diced onion and minced garlic to the skillet during the last 2 minutes of cooking until fragrant.
  3. Transfer the meat and onion mixture to a 6-quart slow cooker.
  4. Pour in tomato sauce, beef broth, and dried Italian seasoning. Stir to combine. Add red pepper flakes if using.
  5. Break dry lasagna noodles into 2-inch pieces and add them to the slow cooker. Stir gently to ensure noodles are submerged in liquid.
  6. Cover and cook on low for 4 to 5 hours until noodles are tender.
  7. While soup cooks, mix ricotta with half of the mozzarella and half of the Parmesan in a small bowl. Add a splash of milk or broth to loosen.
  8. Once noodles are cooked, turn slow cooker to high. Stir in the ricotta mixture and remaining cheeses until melted and creamy.
  9. Taste and adjust seasoning with salt and pepper. Let sit for 5 minutes before serving.

Notes

If the soup is too thick, add more broth or water. If too thin, cook uncovered on high for 30 minutes. For a lighter version, swap beef for ground turkey or plant-based crumble. Fresh basil can be added at the end for freshness. Ensure ricotta is not too watery by draining if necessary.
