  • 2 tbsp cornstarch
  • Pinch of salt
  • 1 ½ cups all-purpose flour (190g)
  • ¼ cup granulated sugar (50g)
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, cold and cut into cubes (115g)
  • ½ cup whole milk (120ml)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine peeled and sliced peaches with granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, cornstarch, and a pinch of salt. Toss gently to coat and set aside for 10-15 minutes to macerate.
  3. In a medium bowl, whisk together flour, sugar, baking powder, and salt. Add cold, cubed butter and cut into the dry ingredients using a pastry cutter or two forks until mixture resembles coarse crumbs with pea-sized bits of butter.
  4. Pour in milk and vanilla extract, stirring gently just until dough comes together. Do not overmix.
  5. Pour the peach mixture evenly into the prepared baking dish. Dollop spoonfuls of the crust dough over the peaches, leaving gaps for juices to bubble through.
  6. Bake for 40-45 minutes until the crust is golden brown and the peach filling is bubbling. Tent with foil if crust browns too quickly.
  7. Let the cobbler cool for at least 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
