Cozy Stuffed Acorn Squash with Sausage and Wild Rice

A comforting winter dinner featuring roasted acorn squash halves filled with a savory mixture of ground sausage, wild rice, onions, and sage. This easy, one-pan style meal is perfect for busy weeknights and offers a balance of sweet and savory flavors.

  • 2 medium acorn squashes
  • Olive oil (for drizzling)
  • Salt and black pepper
  • 1 pound ground sausage (sweet Italian recommended)
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh sage leaves, chopped
  • 1 cup cooked wild rice
  • 1/2 cup low-sodium chicken or vegetable broth
  • 1 tablespoon pure maple syrup
  • Optional: 1/4 cup dried cranberries
  • Optional: 1/4 cup chopped roasted chestnuts

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash squashes and cut in half lengthwise. Scoop out seeds and pulp.
  3. Brush cut sides with olive oil and season with salt and pepper. Place cut-side down on a rimmed baking sheet.
  4. Roast squash for 30 minutes until tender when pierced with a fork.
  5. While squash roasts, heat a large skillet over medium heat. Add sausage and cook for 5-7 minutes until browned. Remove sausage and set aside.
  6. In the same skillet, sauté diced onion in a splash of olive oil for 3-4 minutes until translucent.
  7. Add garlic and chopped sage; cook for 1 minute until fragrant.
  8. Return sausage to the skillet. Add cooked wild rice, broth, and maple syrup. Stir to combine and adjust seasoning.
  9. Remove roasted squash from oven and flip cut-side up.
  10. Spoon the filling generously into each squash half.
  11. Return to oven, cut-side up, for 10 minutes to meld flavors and crisp the top.
  12. Let cool for 5 minutes before serving.

Notes

To make cutting the squash easier, microwave the whole squash for 2 minutes before cutting. If you prefer a crispy top, broil the stuffed squash for the last 2 minutes of cooking. Leftovers can be stored in the refrigerator for up to 3 days or the filling can be frozen separately for up to 2 months.
