A creamy, spicy buffalo chicken dip made effortlessly in the slow cooker, perfect for parties and casual gatherings. This dip combines shredded chicken, cream cheese, buffalo sauce, and ranch dressing for a crowd-pleasing appetizer.

Ingredients

Scale
  • 3 cups shredded cooked chicken (about 450 grams, rotisserie chicken recommended)
  • 8 oz cream cheese (225 grams, softened)
  • 1 cup buffalo wing sauce (240 ml, Frank’s RedHot recommended)
  • ½ cup ranch dressing (120 ml)
  • 1 cup shredded cheddar cheese (115 grams)
  • ½ cup blue cheese crumbles (optional, 60 grams)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Shred about 3 cups (450 grams) of cooked chicken. Rotisserie chicken works great here. Set aside.
  2. Soften the cream cheese by microwaving for about 20 seconds or leaving at room temperature until soft enough to stir easily.
  3. In a mixing bowl, combine 8 oz (225 grams) of softened cream cheese, 1 cup (240 ml) buffalo wing sauce, and ½ cup (120 ml) ranch dressing. Stir until smooth and creamy.
  4. Stir in 1 teaspoon garlic powder, 1 teaspoon onion powder, salt, and pepper to taste.
  5. Fold the shredded chicken into the creamy buffalo base until well coated.
  6. Pour the mixture into your slow cooker insert, spreading evenly.
  7. Cover and cook on low for 2 hours or on high for 1 hour. Stir halfway through cooking to prevent sticking.
  8. About 15 minutes before serving, sprinkle 1 cup (115 grams) shredded cheddar cheese and optional ½ cup (60 grams) blue cheese crumbles on top. Replace lid and allow cheese to melt.
  9. Give the dip a final stir to mix in melted cheese, then spoon into a serving dish or serve directly from the slow cooker on a warming setting.

Notes

If you want a golden bubbly top, transfer the dip to an oven-safe dish and broil for 2-3 minutes just before serving. Watch it closely! If the dip seems too thick, add a splash of milk or extra ranch dressing to loosen it. Stir halfway through cooking to prevent sticking. Use shredded chicken for best texture. Can be made on stovetop over low heat with frequent stirring if no slow cooker is available.
