A creamy, spicy buffalo chicken dip topped with blue cheese crumbles that delivers a perfect balance of heat and tang, ideal for game day or any gathering.

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie chicken recommended)
  • 8 oz cream cheese, softened (Philadelphia recommended)
  • 1/2 cup buffalo wing sauce (Frank’s RedHot recommended)
  • 1/2 cup ranch dressing (homemade or store-bought)
  • 1/2 cup blue cheese crumbles (firm quality like Maytag or artisan brands)
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Optional garnish: chopped green onions or fresh parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat 8 oz of softened cream cheese until smooth and creamy (2-3 minutes).
  3. Add 1/2 cup buffalo wing sauce and 1/2 cup ranch dressing to the cream cheese and beat until fully combined and smooth (1-2 minutes).
  4. Add 1 tsp garlic powder, 1 tsp onion powder, salt, and pepper to taste; stir gently to combine.
  5. Fold in 2 cups cooked shredded chicken and 1 cup shredded mozzarella cheese carefully to ensure even coverage.
  6. Spoon the mixture into a greased 9-inch baking dish or oven-safe skillet and smooth the top.
  7. Sprinkle 1/2 cup blue cheese crumbles evenly over the top.
  8. Bake at 350°F (175°C) for 20-25 minutes until bubbly and blue cheese starts to brown slightly.
  9. Remove from oven and garnish with chopped green onions or fresh parsley if desired.
  10. Let cool for 5 minutes before serving. Serve warm with tortilla chips, celery sticks, or soft pretzels.

Notes

Soften cream cheese at room temperature for 30 minutes before mixing to avoid lumps. Use rotisserie chicken for best flavor and juiciness. Sprinkle blue cheese on top instead of mixing in to preserve its bold flavor and texture. If dip is too thick after baking, stir in a splash of warm milk. For extra heat, drizzle more buffalo sauce on top before serving. Leftovers keep well refrigerated for up to 3 days and taste even better the next day.
