  • 1 tablespoon (5g) unsweetened cocoa powder (Dutch-processed or regular)
  • 1–2 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • ½ teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Combine the dry ingredients: In your mason jar or a small bowl, add ½ cup rolled oats, 1 tablespoon chia seeds (if using), 1 tablespoon unsweetened cocoa powder, and a pinch of sea salt. Whisk them together with a fork so the cocoa powder gets evenly distributed.
  2. Add the wet ingredients: Pour in ½ cup milk of choice, ¼ cup Greek yogurt, 2 tablespoons peanut butter, 1-2 tablespoons maple syrup, and ½ teaspoon vanilla extract.
  3. Stir like you mean it: Use your spoon to mix everything together until the cocoa powder is fully incorporated and no dry patches remain. This takes about 30 seconds of vigorous stirring. Make sure to scrape the bottom corners of the jar.
  4. Taste and adjust: Taste the mixture before refrigerating. If you want it sweeter, add more maple syrup. If you want more chocolate, add another teaspoon of cocoa. If you want it more peanut buttery, swirl in another tablespoon.
  5. Seal and refrigerate: Put the lid on your jar and place it in the fridge. Let it sit for at least 4 hours, but overnight is ideal (8-12 hours).

Notes

For best texture, use rolled oats, not quick oats. The oats actually taste better on day 2 and 3 as flavors meld. If using quick oats, reduce milk by 2 tablespoons and refrigerate only 2-3 hours. For a vegan version, use plant-based milk and yogurt. For nut-free, swap peanut butter with sunflower seed butter. To prevent cocoa clumps, whisk dry ingredients together first.
