  • 2 large English cucumbers (or 3 medium Persian cucumbers), sliced into ¼-inch rounds
  • 1 cup full-fat sour cream
  • ¼ cup fresh dill, chopped
  • 2 tablespoons white vinegar
  • 1 teaspoon kosher salt (for salting cucumbers), plus ¼ teaspoon fine sea salt (for dressing)
  • ½ teaspoon freshly ground black pepper
  • ¼ cup red onion, thinly sliced (optional)
  • ¼ teaspoon garlic powder (optional)

Instructions

  1. Slice the cucumbers into thin rounds, about ¼-inch thick. If using English or Persian cucumbers, leave the skin on.
  2. Place cucumber slices in a large bowl and sprinkle with 1 teaspoon kosher salt. Toss gently to coat. Let sit for 15 minutes at room temperature until liquid pools at the bottom.
  3. Transfer cucumbers to a colander and rinse briefly with cold water to remove excess salt. Shake off water, then spread on a clean kitchen towel or paper towels and pat dry.
  4. In a medium bowl, combine 1 cup sour cream, 2 tablespoons white vinegar, ¼ cup chopped fresh dill, ½ teaspoon black pepper, and ¼ teaspoon fine sea salt. Whisk until smooth and creamy.
  5. Add dried cucumber slices (and red onion if using) to the dressing. Gently fold until every slice is coated.
  6. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  7. Give the salad a final stir before serving. Garnish with extra fresh dill or black pepper. Serve cold or at room temperature.
