A quick and easy homemade summer treat featuring creamy Greek yogurt blended with mixed berries and a touch of honey, perfect for cooling down on hot days.

Ingredients

  • 2 cups (480 ml) Greek yogurt (full-fat preferred, 2% or non-fat works too)
  • 1 ½ cups (225 g) mixed berries (fresh or frozen; strawberries, blueberries, raspberries, blackberries)
  • 23 tablespoons (3045 ml) honey (or maple syrup/agave for vegan option)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 tablespoon (15 ml) lemon juice
  • Optional: 1 tablespoon (10 g) chia seeds
  • Optional: finely chopped mint leaves

Instructions

  1. Prepare the berries by rinsing fresh berries gently and patting dry. Hull strawberries and cut larger berries into halves or quarters. For frozen berries, rinse quickly under cold water to remove frost.
  2. In a blender or food processor, combine Greek yogurt, berries, honey, vanilla extract, and lemon juice. Blend until smooth but thick, aiming for a creamy texture that is not too runny. Pulse a few times if you prefer bits of fruit texture.
  3. Stir in optional chia seeds or mint leaves if using. Do not blend chia seeds to maintain texture.
  4. Pour the mixture carefully into popsicle molds, leaving a small gap at the top for expansion. Insert sticks. If using paper cups, cover each with foil and poke a stick through the center.
  5. Freeze the molds on a flat surface for 6-8 hours or overnight. Cover with plastic wrap or a container lid to avoid freezer odors.
  6. To unmold, run warm water briefly over the outside of each mold for 10-15 seconds and gently pull the popsicle by the stick.

Notes

For creamier popsicles, add a tablespoon of full-fat coconut milk. Avoid overblending to prevent icy texture. Freeze on a flat surface to keep popsicles shaped well. Wrap leftover pops individually in parchment paper to prevent freezer burn. Run warm water over molds to unmold easily.
