Rich, creamy mashed potatoes made with Yukon Golds, bloomed fresh garlic, and warm cream. This easy side dish is perfect for dinner parties and weeknight dinners alike.

  • 3 pounds Yukon Gold potatoes, peeled and cut into 1.5-inch chunks
  • 1/2 cup unsalted butter, softened
  • 1/2 cup heavy cream, warmed
  • 4 to 5 cloves fresh garlic, minced
  • 1 teaspoon garlic powder
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste
  • Chives or parsley, optional for garnish

Instructions

  1. Peel potatoes and cut into equal-sized chunks. Place in a large pot, cover with cold water by an inch, and add a generous pinch of salt.
  2. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes until tender when pierced with a fork. Drain and let steam dry for a minute.
  3. While potatoes cook, melt butter and minced garlic in a small saucepan over low heat for 2-3 minutes until fragrant and golden but not brown. Add heavy cream and heat until warm.
  4. Return drained potatoes to the warm pot and mash with a potato masher or wooden spoon until somewhat smooth but slightly chunky.
  5. Pour the warm butter and cream mixture over the mashed potatoes. Add garlic powder and black pepper. Fold together with a wooden spoon, adding more cream if needed.
  6. Taste and adjust seasoning with salt. Serve immediately, topped with extra butter and chopped chives if desired.

Notes

Start potatoes in cold water to ensure even cooking. Warm the cream and butter mixture before adding to prevent the potatoes from cooling down and the butter from congealing. Do not use a food processor or blender as it will make the potatoes gummy. For a dairy-free version, substitute butter with vegan butter and cream with oat cream.
