  • ½ cup (120 ml) sour cream
  • ¼ cup (60 ml) mayonnaise
  • 1 cup (100 g) sharp cheddar cheese, shredded
  • 2 medium jalapeños, seeded and finely diced
  • 2 stalks green onions, thinly sliced
  • 1 clove garlic, minced
  • 6 slices bacon, cooked until crispy and crumbled
  • Salt and black pepper, to taste
  • Tortilla chips or pita chips, for serving

Instructions

  1. Prep the jalapeños and bacon: wash and dice jalapeños finely, removing seeds for less heat if desired. Cook bacon in a skillet over medium heat until crispy, about 8 minutes, turning occasionally. Drain on paper towels and crumble once cool.
  2. Mix the base: in a mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Beat with an electric mixer or whisk until smooth and creamy.
  3. Add cheese, jalapeños, green onions, and garlic: fold in shredded cheddar, diced jalapeños, minced garlic, and sliced green onions. Season with salt and pepper and mix gently to combine.
  4. Assemble and bake (optional): transfer dip to an oven-safe dish and spread evenly. Sprinkle crumbled bacon on top. Bake at 375°F (190°C) for 12-15 minutes until bubbly and slightly golden on edges. Alternatively, serve chilled.
  5. Serve with chips: let dip cool slightly before serving with tortilla or pita chips.

Notes

If cream cheese is not soft enough, microwave in 10-second bursts until softened. Remove jalapeño seeds to reduce heat. Cook bacon low and slow for maximum crispiness. Dip can be served warm or chilled. For vegetarian version, omit bacon and add toasted breadcrumbs or crispy fried onions. For dairy-free, use dairy-free cream cheese and sour cream alternatives and plant-based cheese. Store leftovers in airtight container in fridge up to 3 days; reheat gently.
