  • 4 boneless, skinless chicken breasts (about 6 ounces or 170 grams each)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed, drained but some oil reserved)
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped
  • 1 cup orzo pasta
  • 1 tablespoon butter

Instructions

  1. Pat dry chicken breasts and season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and keep warm.
  3. Lower heat to medium. In the same pan, add minced garlic and chopped sun-dried tomatoes. Stir for about 1 minute until fragrant.
  4. Pour in chicken broth, scraping up brown bits from the pan. Simmer 2-3 minutes to reduce slightly.
  5. Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes if using. Simmer gently, stirring often, until sauce thickens, about 5 minutes.
  6. Return chicken to pan, nestle into sauce, cover, and simmer on low for 5 minutes to meld flavors and keep chicken moist.
  7. Meanwhile, cook orzo in salted boiling water according to package instructions (8-10 minutes) until al dente. Drain and toss with butter.
  8. Remove chicken from heat, stir chopped fresh basil into sauce, and season to taste with salt and pepper.
  9. Serve chicken over buttery orzo, spooning generous sauce on top.

Notes

If sauce is too thick, add a splash more broth or cream. If too thin, simmer uncovered longer. Let chicken rest after cooking to seal in juiciness. Use room temperature chicken for even cooking. Avoid overcrowding pan to get a good sear. Fresh basil added at the end brightens the sauce.
