A quick, no-cook breakfast made with just a few simple ingredients. These overnight oats are creamy, satisfying, and perfect for meal prep, coming together in under five minutes.

  • 1 cup old-fashioned rolled oats
  • 2 tablespoons creamy peanut butter
  • 1 medium ripe banana
  • 1 cup milk of choice (dairy, almond, or oat milk)
  • 1 teaspoon honey or maple syrup (optional)
  • 1/2 teaspoon cinnamon

Instructions

  1. Peel the banana and place it in the bottom of a 4-8 oz mason jar or airtight container. Mash it thoroughly with a fork until it is almost a puree with no large lumps.
  2. Add the peanut butter, salt, and cinnamon to the jar. If the peanut butter is stiff, microwave it for 10 seconds to soften it for easier mixing.
  3. Pour in the milk. If using a blender, you can blend the milk, peanut butter, banana, and spices first for a smoother consistency, then pour over the oats.
  4. Add the rolled oats. They will float to the top initially.
  5. Stir the mixture vigorously with a fork or spoon to ensure the oats are fully submerged and the peanut butter is incorporated. This step is crucial to prevent dry clumps.
  6. Seal the jar tightly with a lid and place it in the refrigerator.
  7. Let the oats sit for at least 4 hours, but overnight is best to allow the oats to absorb the liquid and soften.
  8. In the morning, check the consistency. If too thick, add a splash of milk. If too thin, add a few more oats and let sit for 30 minutes.

Notes

Do not use instant oats as they become mushy; use old-fashioned rolled oats. For best texture, eat within 3 days, though they last up to 5 days in the fridge. Use cold milk to prevent the banana from browning. If adding protein powder, increase milk by 1/4 cup to account for absorption.
