Instructions

  1. Prepare the cream cheese filling by beating the softened cream cheese in a small bowl until smooth and creamy. Set aside.
  2. Slice the brioche into thick slices about 1 inch thick, then slice each piece horizontally to create two thinner layers.
  3. In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and a pinch of salt until fully combined and slightly frothy.
  4. Lightly grease a 9×13-inch baking dish with melted butter. Arrange half the bottom brioche slices in a single layer.
  5. Spread a thin, even layer of cream cheese over each slice, then top with peach slices. Add the remaining brioche slices on top.
  6. Slowly pour the custard evenly over the layered bread, pressing down gently with a spatula to help the bread soak up the mixture.
  7. Cover with plastic wrap or foil and refrigerate for at least 2 hours or overnight for best results.
